The Hormone Lady Meets Paula Deen

Got your attention didn’t it? Unfortunately, I haven’t gotten to meet Paula in person but I watch Paula Deen’s Home Cooking about everyday while I am on my elliptical burning off the pounds I gain just watching those mouth watering, lip smacking dishes being prepared with an extra slab of butter. It reminds me of all the good cooking I grew up with that contributed to my nickname, Fatnin’.

Every Paula Deen recipe I have made has gotten rave reviews. Just recently I made her Spinach Bacon Quiche for a special birthday breakfast for 3 of our Club HORMONZTM members. They said it was the best quiche they ever had and wanted the recipe. Because they loved it so much I figured you would, too.

If you know Paula’s cooking, you are probably wondering how in the world can you be promoting food that is so unhealthy. My philosophy on food is: eat healthy the majority of the time and when you don’t eat small portions. Plus, you can always adjust the recipe to make it healthier.

Normally, I would have made healthier substitutions but hey it was a celebration!

I did change a few things and put my little spin on this recipe. I added the nutmeg and substituted ½ cup of smoked gouda cheese instead of 11/2 cups of Swiss cheese. In other words, I made it more fattening. Here’s my version.

Spinach Bacon Quiche

Ingredients

6 large eggs, beaten

1 1/2 cups heavy cream

Salt and pepper

Dash of nutmeg

2 cups chopped fresh baby spinach, packed

1 pound bacon, cooked and crumbled

1 cup shredded Swiss cheese

½ cup Smoked Gouda cheese

1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

Directions

Preheat the oven to 375 degrees F.

Combine the eggs, cream, salt, pepper and nutmeg in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Healthier Suggestions:

Substitute skim or lower fat milk for the heavy cream

use turkey bacon, salmon, or no meat at all

Reduced fat cheese

Eliminate the crust

    Roz, you have a way with food! “YUM” is the first word that comes to mind when there’s a get together at your house :) Thanks for all you do!

    Wanted to mention too w/ all that “good for you” stuff you added to the quiche recipe, the Club Hormonz™ gals DID walk off those calories at the Pet Helpers fund raiser ~~~ diet and exercise! What a great day!

    Thanks for your comments. The whole day was Real Hormone Therapy for me. The Cooking, Baking, Eating, Spending time with great friends, good music and helping animals. I was Livin’, Luvin’ and Feelin’ GOOD!
